Lucas Payà
Global Brand Educator for House of Lustau
Lucas Payà is an independent consultant and ambassador working with world-class firms dedicated to wine, beverage, and culinary culture. Early in his career, he worked for legendary chef Alain Ducasse in London, becoming the lead sommelier within six months. In 2002, he joined elBulli restaurant, where he spent five years as head sommelier, working under Ferran Adrià and Juli Soler, shaping his deep understanding of gastronomy, wine, and service. Lucas later became Wine & Beverage Director for José Andrés’ ThinkFoodGroup (TFG), overseeing its international beverage programs. After leaving TFG, he played a key role in launching Coravin in Spain and other European markets. In 2016, he was appointed Global Brand Educator for House of Lustau, developing the Certified Sherry Wine Specialist (CSWS®) program in collaboration with the Regulatory Council of Jerez. Lucas holds a Diploma from the Wine & Spirit Education Trust (WSET), is a Spanish Wine Scholar, a member of L’Ordre des Coteaux de Champagne, and a Certified Sherry Educator.
