Cave Central da Bairrada

Cave Central da Bairrada, S.A. is located in the heart of Bairrada (Anadia)- Portugal. Especialized in sparkling wines, semi-sparkling.

Wine

Cave Central da Bairrada was founded in 1924 by José Ferreira Tavares, whose name was “José Ferreira Tavares Lda.” and “Cave Central da Bairrada” as a brand name. Its main activity was the production of aerated sparkling wine. After several owners, the company was acquired, in 1977, by Américo Matos and relatives, current owners. The production of Table Wine, Liquors, Spirit, Brandies and non-alcoholic beverages was added to the main production, aerated sparkling wine. It was also gathered the trading of Wines from the Demarcated Region, in particular from the Regions of Bairrada, Dão and Verde wine. It is worth mentioning the launching of the “Castiço” Aerated Sparkling Wine, in 1978. The wine was especially created to accompany grilled dishes and Bairrada’s Roasted Piglet. It is still marketed today. In 2002, in order to improve quality and monitor market trends, Cave Central da Bairrada made a radical change in the production process. With the new process, there is no longer carbon dioxide addition to the wines, thus they acquire their own gas, by natural fermentation in closed vats – “Charmat Method”. They also started producing sparkling wines. During 2005, Cave Central da Bairrada applied the same production process to the “Castiço” Aerated Semi-Sparkling Wine, which is now called “Castiço” Semi-Sparkling Wine, since the gas is acquired by the fermentation in closed vats. Currently, the organization’s products portfolio focuses on the production of sparkling wines, semi-sparkling wine, liquors, syrups (currant) and spirits. In the range of sparkling wines, the highlight is the sparkling “M&M Gold Edition” and “M&M Silver Edition”. The M&M sparkling wines have already received prizes, both nationally and internationally.
